Whole Wheat Oat Waffles

Ingredients

Recipe Makes 10 waffles.
Dry
​Rolled Oats, 100g
Soft Whole Wheat Flour, 100g
Baking Powder, 15g
Sea Salt, 1dash

Wet
Apple Sauce, 200g
2% Milk, 350g
Eggs 2, large, separated
Canola Oil, 25g
Vanilla Extract, 5g (1tsp)

Procedure

Preheat the waffle iron to max before you start making the batter.

Step 1: Put all dry ingredients into a food processor - blend well. Put into large mixing bowl.

Step 2: Separate the egg-whites from the yolks. White in a clean (oil free) bowl. Yolks in food processor waiting for other wet ingredients. Use an electric mixer to bring whites to firm peaks.

Step 3: Mix the wet ingredients with the yolks in food processor well.

​Step 4: Make a well in the dry ingredients and, using the electric mixer, add the wet ingredients to the dry and blend well.

​Step 5: Using a silicon spatula,  gently fold the whites into the batter maintaining their fluffiness by cutting and turning them over repeatedly. Let stand 10mins. 

Step 6: Lightly brush the waffle iron with canola oil and use half a cup of batter per waffle. Cook in ron until most of the steam has been released or until their toasty brown. Eat immediately with yummy toppings. Or, cool on a rack and freeze. Reheat well in toaster.
